Ingredients
For the chicken:
4 boneless, skinless chicken thighs or breasts
2 tbsp Rambo rub
1 tbsp olive oil
Juice of half a lemon
For the sauce:
1 cup Greek yogurt (unsweetened)
1 tbsp good quality extra virgin olive oil
1 clove garlic, finely minced
Zest of 1 lemon
1 tbsp fresh chopped dill or mint (optional)
Salt to taste

Instructions
1. Marinate the Chicken:
In a bowl, toss the chicken with Rambo, olive oil, and lemon juice. Let it marinate for at least 15 minutes (or up to overnight in the fridge for deeper flavor).
2. Cook the Chicken:
Grill or pan-sear over medium-high heat for 6–7 minutes per side, or until cooked through and nicely charred on the outside. Let rest for 5 minutes before slicing.
3. Make the Sauce:
In a small bowl, mix together the Greek yogurt, olive oil, garlic, lemon zest, herbs (if using), and salt. Adjust to taste.
4. Serve:
Plate the sliced chicken and drizzle with the yogurt sauce. Serve with flatbread, a simple salad, or roasted veggies.
