Crunchy Donkey Fish Fillets

A crispy, flavour-packed fish dish using MeatHeads' Donkey seasoning!
Ingredients:
2 fish fillets (monkfish or any firm white fish)
½ cup breadcrumbs
1 tbsp MeatHeads Donkey seasoning
½ cup Rice Bubbles (crushed slightly)
1 egg (beaten)
2 tbsp flour
Olive oil spray
Instructions:
Preheat Oven: Set your oven to 180°C (350°F).
Prepare the Coating: In a bowl, mix breadcrumbs with Donkey seasoning. In another bowl, place the crushed Rice Bubbles.
Coat the Fish: Lightly coat each fillet in flour, dip in beaten egg, then press into the breadcrumb mixture. Finally, coat with the crushed Rice Bubbles for extra crunch.
Bake: Place fillets on a lined baking tray, lightly spray with olive oil, and bake. Cooking time will vary depending on fillet thickness—check after 12-15 minutes. The fish should be golden and flake easily with a fork.
Serve: Enjoy with a fresh salad, roasted veggies, or lemon wedges for extra zing.
