BBQ Brisket with Blazin’ Grazin’

A straightforward BBQ brisket guide using Meatheads Blazin’ Grazin’ beef rub for bold peppery, smoky flavour.

WHAT YOU NEED

Ingredients

  • 1 beef brisket
  • Blazin’ Grazin’ beef rub, enough for a generous coating
  • 1 tbsp yellow mustard or neutral oil, optional binder
  • Beef stock or water for spritzing
GET COOKING

Method

    Trim any very hard surface fat and pat the brisket dry. Apply a light binder if using, then season generously with Blazin’ Grazin’.

    Set the smoker or BBQ for indirect low-and-slow cooking around 120–135°C.

  3. 3

    Cook with the fat positioned to protect the meat from the strongest heat. Spritz only when the surface looks dry.

    When the bark is dark and set, wrap if desired and continue until a probe slides into the thickest part with very little resistance.

  5. 5

    Rest the brisket well before slicing across the grain.
